Vegan Pesto

For me basil has proven to be a very easy plant to grow, and basil has been bountiful. Trying to make use of all the basil and have been throwing it in all sorts of dishes. Then I started playing around with making pesto.

Now, I have high standards for my pesto. It has to be vegan and oil free, and of course supper delicious. I feel confident that you will love this recipe and will soon be hooked on it just as I am.

Ingredients:

1/4 cup water

2 cloves garlic

2 cups packed basil

1/3 cup walnuts

1/4 cup nutritional yeast

1/2 tablespoon no salt seasoning

1/2 tablespoon balsamic vinegar

black pepper to taste

Directions:

Place all ingredients in a food processor and blend until your desired consistency. Take frequent breaks during the blending process to make sure you that you are not over blending, so you can keep it nice and chunky.
