Super Simple Oat Cookies

I originally made these cookies for a quick breakfast treat, but they quickly turned into an anytime treat. Then my appreciation for these cookies grew even more when I was in the early days of breastfeeding. They helped tame my ravenous appetite, known to nursing moms the world over, and the oats helped with my milk supply. Plus, you don’t have to worry about added sugar. They are also plenty sweet from the banana and raisins. However, if you did want to get a little wild with them, you can replace the raisins with chocolate chips.

Ingredients:

3 ripe bananas

1½  cups quick cooking oats or old-fashioned rolled oats

½  cup peanut butter

½ cup raisins

Directions:

Preheat oven to 350° 

In a large mixing bowl mash the 3 bananas with a wooden spoon. Once the bananas are all mushy mix, in the oats, peanut butter, and raisins. Mix until ingredients are well blended.  

Use a large spoon to make medium-sized cookie dough balls. Then, place them on a baking sheet lined with parchment paper and slightly flatten them with the spoon. 

 Bake for 15-20 minutes, until they start to brown.

Makes around 12 cookies
